You’re invited to HCC’s first afternoon tea class! Come spend a weekend learning how to bake all the quintessential offerings you would find on a high tea dessert tower. We will spend the first day and part of the second day preparing items such as lemon bars, macarons, quiche, scones, and more. At the end of day two, you will sit down and enjoy all your hard work at afternoon tea in our Dragons Fire cafe. Instructor: Chef Lauren Kmiecik. Sunday class will end at 1 p.m.

Come explore the world of flat beads. We will make some of our favorites such as Onion Kulcha, Fougasse, Cheddar Cheese Crackers, and Chinese Scallion Pancakes. In this hands-on class, you will learn the skills to create these quick and delicious breads at home! Instructor: Chef David Milburn.
Explore how cocktails contribute to a restaurant’s atmosphere and bring people together–especially during the most celebratory time of year. Learn how to properly shake and build a cocktail, infuse spirits with seasonal ingredients, prepare drinks in larger batches for holiday gatherings, and understand how different liquors pair with mixers and flavors. Dive into the fundamentals of major spirit categories and how they’re made, with live demonstrations and guided instruction, and create your own festive cocktail to enjoy. Instructor: Fina Kenny.

Join Judge’s Bench owner and scotch expert Mike Johnson for two evenings of education and tastings. Learn about the history, distilling process, and taste characteristics of single malts as well as the production regions and geography of Scotland. Discuss individual distilleries and understand the influence of location versus process and their effect on the taste of “liquid gold.” Must be at least 21 years old and present an ID. Meet at The Judge’s Bench, home of the largest collection of single malts in Maryland, located in historic Ellicott City. Must be 21 or over at time of registration.
